I taught myself how to cook linguine using the shallow pan technique tonight. Wish I’d figured this out years ago. It’s so much better than boiling it in a huge pot of water. You don’t even need to drain the water, since it mostly evaporates during cooking, leaving behind the starch. Just scoop the pasta into a bowl and serve it any way you want. Can be a simple cacio e pepe, a cream sauce, or whatever you like. Sorry, no plated photo, but I assure you it was delicious! #foodstr 🤌🍝🇮🇹

Ooh…I love the narration in this. 😆 This looks a lot harder to master. What kind of pan do I need for this? He said never to use an untreated stainless steel pan. The main one I use has a ceramic coating, but if I need something different, I’m open to it. I also have a cast iron pan.
He said not to use an untreated one, but I’m not sure what the right way to prepare a stainless steel pan is. Need more research.
