I'm planning to build a freeze dryer for this purpose.
More nutrients are preserved, longer shelf life and , re-constituting works better. This is not a exhaustive list. There are many reasons astronaut food is freeze dried. "Typically" not done because of the barrier to entry. The equipment is expensive and harder to source ie; Walmart doesn't sell them but they do sell dehydraters and canning equipment. But I think I can fabricate a vacume chamber to be installed in a repurposed an old chest freezer for under $300 including the pump.
