In case anyone's making hot cocoa this winter, please follow the correct protocol: Heat a cup milk on the stove until it's steaming. In the meantime, mix 2 tbsp of honey or maple syrup with a tablespoon of cocoa powder until it's smooth. Slowly mix in the hot milk. Perfectly smooth and rich hot cocoa. Save money, drink healthy. Yes, the longer you keep it at temperature, the more bacteria you kill. But I think it takes a long time if you just heat it to 130-140 ish. The cultures don't just die all at once.
