We tapped 50 walnut a few years ago. Syrup is great, like nothing Ive tasted. But it was too much work compared to maple. Bark was thick, didnt give as much sap, ratio is 85 to 1, and too keep it separate from the maple boil was extra. We got 1.25 gal. I put in small glass bottles and we pull 1 out of the freezer each christmas. Great experiment but not again for us.
