Slightly overdone for my liking, but still delicious. Stalled around 129F and needed to get it done so bumped the oven to 375F. Doing a little #foodstr or #cookstr or whatever the correct tag is experimenting. Tried 2 new peppercorns. Varieties related to black table pepper not chilis. I'm comparing to fresh ground, not pre ground which tastes like ashes and you should be embarrassed if you use it. I tried both varieties by chewing and eating a whole berry. Grains of Paradise. These tasted a little more earthy but also have a bit more kick. Sichuan. These taste like what on earth did I just put in my mouth. Tingling and numbness lasted about 5 minutes.

One of my favorite quick meals recently. Take some beef, slice it thin, fry it with onions and garlic, fat dollop of gochujang, and some soy sauce. Get you some rice ready and give it a fat pile of green onions. And I have a shitty homemade attempt at Laugai Ma for the rice and some extra chili kick. (It's not that shitty, it's just not quite the same yet. I am not Chinese and do not have any teachers other than the internet.) #foodstr
