First batch of maple syrup of the season is boiled and bottled! 🍁 Looks like it could turn out to be a great season. 45 gallons of sap collected over three days, boiled down to 144 oz of Grade A Amber. 👌 Early season syrup is my absolute fav. Beautiful endeavor. Curious how to drive off moisture and condense syrup with out scorching the sugar...that's part of the art, no doubt. Enjoy this amazing treat
As long as you don’t evaporate off too much liquid you don’t risk scorching. It’s approximately 40:1 sap to finished syrup so lots of liquid to evaporate away which takes many hours. Maple syrup boils at 219°F (compared to water at 212°F) so once it gets close to that you know you’re in the sweet spot.
50 taps this year! It’s still super small scale compared to most and takes many hours to evaporate any decent amount of sap on our little homemade evaporator. I think last year we ended the season at around 5 gallons of finished syrup. Labor of love for sure, and gets you outside in end of winter / early spring which is a great bonus.

I remember watching Netflix Documentary about The Great Canadian Maple Syrup Heist and I could not belive it was most valuable heist in Canadian history.
